Joeleen Ng runs cafes inside climbing gyms. Not adjacent to them. Inside. The counter sits at the base of the wall, the espresso machine hums between route announcements, and the customer waits for a pull-up bar to open while their cortado steams.
The model is Georgies, her mini-chain operating out of Vital Climbing Gyms across the U.S. The setup is clean: small footprint, high throughput, captive audience. A climber walks in for a two-hour session and leaves with a pastry receipt. The cafe doesn't compete with the neighborhood spot three blocks over because it's not trying to. It's the only option within the four walls.
Ng started in events, then moved to Bluestone Lane's corporate team before landing at Vital. The pitch was direct: climbers need food and coffee, gyms need revenue streams that aren't day passes, and a well-run cafe can do both without fighting for street traffic. She opened the first Georgies in 2019. Four years later, there are seven.
The constraints dictate the menu. No full kitchen, no table service, nothing that requires a salamander or a hood system. Pastries from local bakeries, pre-made grain bowls, coffee dialed in but not precious. The average ticket is $8. The repeat rate is high because the climber comes back Tuesday, Thursday, Saturday.
Vital's model leans on programming: classes, leagues, youth teams. Georgies leans on the same calendar. A kids' climbing camp runs 9 to 3, parents wait in the lounge, the cafe does 40 transactions between 8:45 and 9:30. It's not third-wave coffee theater. It's logistics.
The Friday piece in Eater frames it as hospitality-meets-athletics, which undersells the operational simplicity. Ng isn't managing a dinner service or a bar program. She's managing a commissary with good lighting and a card reader that clears before the climber unties their shoes. The space works because the customer is already there, already paying for time, already committed to two hours in one room. The coffee is the add-on, not the destination.
The model scales because it doesn't depend on street presence. A climbing gym opens in Denver, Georgies installs a counter. No lease negotiation, no build-out from zero, no betting on foot traffic. The gym brings the bodies. The cafe converts them.
